What makes rice croquettes such an amazing snack?

Perhaps, it is due to its nutritional value which can be owed to, rice. You must use white rice (not basmati as they do not bind properly). As for other ingredients, you surely have everything right there in your kitchen pantry. So, go ahead and start preparing this amazing appetizer.

 Servings: 8

Preparation Time: 45 minutes + cooling

Cooking time: 15 minutes

Ingredients Required:
  • 1 cup of cooked and refrigerated rice
  • Corn sliced
  • 2 tablespoons Coriander (chopped)
  • Green chillies (chopped)
  • ½ cup Onion (chopped)
  • Salt (to taste)
  • ¼ teaspoon Red chilli powder
  • ¼ teaspoon Cumin powder
  • ½ cup Cheese
  • ½ cup Paneer
  • ½ cup Breadcrumb
  • Oil (for frying)
 For Salsa
  • ½ cup Tomatoes
  • ¼ cup Onion
  • ¼ cup coriander
  • Green chillies (chopped) (to taste)
  • ¼ teaspoon Garlic (chopped)
  • Orange rind (a little)
  • 1 teaspoon Sugar
  • Olives (two)
  • Lemon juice of 1 lime
  • Salt (to taste)
  • Black pepper (to taste)

Leave it for 10-15 minutes

For batter
  • ½ cup Fine Flour
  • Salt (to taste)
  • ¼ teaspoon Black pepper
  • ¼ teaspoon Red chilli powder
  • Water
How to prepare
  • Mix all the ingredients in a big bowl.
  • Leave aside for a while.
  • Make small balls of the dough prepared.
  • Mould them in cylindrical shape using your palms.
  • Now dust some fine flour over them.
  • Roll them in the batter followed by breadcrumb mixture.
  • Fry them in the oil of your choice.

Serve hot with the Salsa.
